Venison Snack Logs

2 lbs. of ground venison

1 tsp. mustard seed

1/2 tsp. black pepper

3 T Morton Curing Salt

1 garlic clove minced

1 cup water

Mix all but the meat into the water. Add the meat and mix well. Place in the refrigerator and leave 48 hours mixing several times during that period.

Form mixture into logs (about 4). Pre-heat oven to 250 degrees. Place logs on a broiler rack and bake for three hours turning several times.

Serve snack logs at room temperature with crackers. Logs freeze well to use at a later time. Other snack log options include cheddar logs, cheddar and jalapeno logs and coarse black pepper logs.
