Quail Pie Recipe

1/4 cup cooking oil
2 carrots, cut in small pieces
4 potatoes, medium size, quartered or cut into small pieces
1 medium sized onion
flour (enough to dredge the 4 quail)
1 can of oven-ready biscuits
Salt and pepper the quail; dredge in the flour and brown in the cooking oil. When the quail are browned, place them in a casserole dish. Add the vegetables and about 1/2 cup water, and cover. Preheat oven to 375 degrees; cook quail until nearly done – this will be about 30 to 45 minutes. Place the biscuits on top of the quail and the vegetables and bake another 15 minutes at 400 degrees.This should serve two. This is another way to cook quail besides the old standby recipes.
