Fish Fillets in a Package

4 fish fillets
4 tablespoons butter
1 large onion, chopped
4 oz. mushrooms, sliced
1 can green chilies, undrained
4 oz. Monterey Jack cheese, grated
4 oz. sharp cheddar cheese, grated
4 flour tortillas
Wash the fillets and dry with a paper towel. In an oven-proof pan, saute the fillets in two tablespoons of butter until done. Remove the fillets. Add the other two tablespoons of butter to the pan and saute the onions and mushrooms for two to three minutes. Add the green chilies and mix well.
Add the fillets back to the pan and mix with the onion, mushroom and chilies mixture. Mix the cheeses and sprinkle over the fish mixture, covering the fish. Place under the broiler until the cheeses melt. Place the fillets and the mixture on the floured tortillas and fold the edges — thus, fillets in a package. Serve with the salsa. Serves four.
